Making Kithul Jaggery is a laborious task and farmers have cheaper and less labour intensive ways to make a living. The Kithul trade is also not attractive for younger generations so the number of farmers who actually engage in making Kithul products are diminishing. Therefore finding premium, authentic Kithul Jaggery is getting increasingly difficult.
There is also a lot of confusion about what good Kithul Jaggery should look and taste like. These characteristics change depending on where the Kithul trees are from, the age of the trees as well as the flowers and the manufacturing process itself. This diversity allows unscrupulous traders to make up different stories about Kithul Jaggery.
Another contentious problem is the concept of adding sugar to Jaggery. Adding sugar is actually necessary to ensure the jaggery holds its form and stays from melting easily. However this level is decided by the farmer and there is no way to ensure a set percentage. This is why we visit our farmers in person and communicate the need for premium quality Kithul jaggery and ensure they deliver on this requirement by paying a premium.
There are no standards that guarantee a uniform processing method in Sri Lanka. However we ensure that all our farmers add only the minimum amounts of sugar, use sustainable fuel sources and prepare and hold the ingredients in stainless steel vessels (to prevent contamination which can occur when using aluminium)
